Korean Low Carb noodles

For those who love noodles but are carb conscious Korean sweet potato noodles will be your savior not only are they tasty but they are also lower in GI than other noodles. Sweet potatoes and taro are lower in GI than other forms of starches such as potato and other products used to make normal noodles. This low fat, low GI meal is tasty and easy to make. As most know I don't cook using proportions but common sense so unlike Tubby my recipes are lacking in this regard. Also note that I like to cook my ingredients separately as I believe that when cooking in large quantities this is more effective and will allow all ingredients to be cooked properly as most require different amounts of time to cook.

Ingredients:

Sweet potato noodles
Prawns
Seafood balls
Capsicum
Tofu
Gai larn (Chinese vegetable)
Garlic
Sesame oil
Oyster sauce
Corn starch
Salt
Pepper
Sugar

Method:
Step 1: Cooking the sweet potato noodles is simple but there are basic tricks involved which can impact texture and taste. Boil water in a pot, add a pinch of salt to the boiling water then add noodles to pot. Wait ~10 minutes. Take noodles out and rinse in cold water to give noodle texture an additional level of stringiness. Add sesame oil for flavour, extra shine and to avoid noodles sticking together.
Step 2: Mix oyster sauce, salt, pepper, sugar, garlic, sesame oil, cornstarch and water to be used as marinade for prawns. Mix salt, pepper, sugar, garlic, sesame oil, cornstarch and water as marinade for other ingredients
Step 3: Add small amount of oil into wok then add garlic. Wait until garlic is brown than add prawns and marinade. Once prawns are cooked add seafood balls and tofu to warm, as these are pre-cooked. Pour into noodle bowl
Step 4: Add small amount of oil into wok then add garlic. Wait until garlic is brown than add capsicum, stir-fry for 5 minutes then add gai larn, which take less time to cook. Add marinade mixture that did not include oyster sauce. Pour into noodle bowl
Step 5: Mix all ingredients. Add sesame oil, chilli sauce and soy sauce to taste. Enjoy!!!
